Beets are one of those rare treats that are not only nutritious but are so tasty you’ll marvel that something so delicious can be so good for you. They can be made ahead of time and keep up to a week when refrigerated. I like to cook beets while watching an hour long procedural drama on TV. Before the show starts, I wash the beet, and fill up a medium or large pot full of water and clean my beet:
I sit down and watch my show for an hour. When my show is over, I wander over to the stove to discover my beet is tender. I drain the water, and wait for my beet to cool, and then I peel my beet:
Slice it:
That is all. My beet is cooked!
